Pancakes with roasted Bananas or Plantains drizzled with golden and maple syrup and shavings of cinnamon or nutmeg
All of the items are accompanied by a wide selection of fruit juices, coffee and English breakfast tea, hot or cold.
Lunches:
Jamaican Chicken Wrap--
Jerk chicken with Greek yogurt, mint, lettuce, topped with the sweetness of cubed mango wrapped in Tortilla
Sweet chili chicken salad with a fresh Caribbean flavour of Papaya and melon, served with a hot garlic roll
Pasta Carbonara---Penna pasta with a white wine, bacon and ham sauce, with homemade vegetarian beerbread and fresh farm butter
Homemade Gourmet Burgers----and we mean that!---- grilled on our fresh-air grill, on a browned sesame seed bun, topped with pesto, mozzarella cheese and grilled mushrooms, pickles and seasoning to suite your taste
Salmon, cream cheese and chives, pasta salad, all with a hint of chili and garlic
Turkey Pita Pockets--served with a green salad, cubed mango and apple or pear, topped with a fresh mint mayonnaise dressing
A selection of mixed salads; Melon, feta and olives Pork, blue cheese and apple Roasted beetroot, almonds, goats cheese
All are served with hot oven-baked bread, homemade dressings and an array of cold meats
Appetizers:
Crab fritters with a hint of mint and ginger served with sour cream, guacamole and topped with chives
Satay Caribbean kebobs with peanut and sesame and soy sauces
Finger-hot asparagus spears wrapped in bacon, with sweet barbecued wings and ricotta baked quiedres
Taste of The Sea---sweet-chili stir-fried giant prawns, beer-steamed mussels curried in a creamy tomato sauce
Cool Breeze---Toasted bruschetta topped with smoked oysters and sour cream, blue cheese, fig and a fresh touch of cilantro
Antipasta---cold meats, cheeses, baby tomatoes, pepper-crackers, crackers, fresh iceberg lettuce

Dinners:
Stuffed Beef Filet---beef pockets filled with cheese, smoked mussels or smoked oysters, served with rosemary and sautéed baby potatoes and steamed local vegetables

Crisp Thai beef----in sesame, soy, ginger infused vegetables, served on a bed of Thai noodles
Grilled Mai-Mai---herb encrusted mahi-mahi grilled on our open-air grill, served with fresh salsa and salads
Baked Mai-Mai served with a selection of fresh vegetables and a tangy salsa sauce
Pork Tenderloin---slow-roasted pork marinated in a sweet Caribbean sauce served with wasabi mash and vegetables
Thai Coconut Seafood Curry---a light fresh lime curry with a hint of the mixed flavors of the Caribbean Sea
Blackened Chicken Fillet---a spicy filet served with butternut and couscous and broad beans or fresh peas
Desserts:
Caribbean Rum-soaked Trifle
Dark Chocolate Fondue with fresh berries or strawberries and cream
Fruit phyllo pastry tower drizzled with Cointreau
Melk Tert (Milk Tart)---a traditional South African tart with a light, delicious and delicate flavor
Double-layered chocolate cake, very rich and moist, topped with whipped cream and cherries
Roast Pear----pear drenched in honey and rum and served with ice-cream topped with walnuts
