Lunch: Seared Thai beef salad with freshly baked foccacia bread. Blackened tuna Nicoise with a sun dried tomato dressing & Lebanese flatbread. Tom Ka Gai Fragrant lemon grass & coconut chicken soup with crusty bread rolls. Seafood Paella with a tomato & onion salad.
Dishes can be simplified to suit you and your groups particular preference.
Appetizers: Tempura shrimp with a plum dipping sauce. Endive spoons with aromatic spiced shredded chicken. Grilled mussels with a coconut, cilantro & chilli pesto. Marinated baked goat's cheese served with hot French bread.

Dinner: Roasted Mahi-Mahi with a parmesan herb crust, julienne vegetables and roast parsnips. Beef Wellington served with a red wine reduction, asparagus & smoked bacon bundles & rosemary potatoes . Thai green shrimp curry served with hokkien noodles in oyster sauce & sesame seed stir fried oriental vegetables. Slow cooked duck breasts with a hot & sour sauce, jasmine rice timbales and minted sugar snap peas.
Desserts: Coconut chocolate tarts. Caribbean lime crθmes. White chocolate Tiramisu. Tropical fruit mille feuille with mango sauce.
