Virginia has been a navigational instructor for over nine years and has many articles published to her credit in a national magazine.
She has also commanded commercial vessels up toe 158 ft. in navigational training, ocean sailing and in oceanographic research.

A native of the U.S.V.I., Jamie was also a New England business owner and holds two Master's Licenses in mechanical trades. Among his other talents, Jamie became a U.S> National ranked competitive swimmer and natural free-diver with a deep appreciation for the aquatic world. Jamie is also an accomplished equestrian with formal training in dressage.
Having been born on a yacht and living his entire life n the ocean, it was easy for him to make the career change to the Yachting Industry. His abilities and flair extend far beyond the engine room, where he is able to ensure guests needs, comforts and the true enjoyment of the surrounding waters.

Chef Brandon Wootten, American
Grandma’s home cooking on the family farm in Virginia inspired Brandon’s career. He started working in local restaurants when he was fifteen. Five years later he ventured to the West Coast to Portland’s Western Culinary Institute. Brandon graduated with a perfect 4.0 GPA from the Le Cordon Bleu program and did his externship at the Playboy Mansion in Los Angeles. That training period turned into a full-time position and when he left six years later, Brandon was the Senior Chef.
By that time, Brandon’s second passion, travel, was calling and he was off to backpack through Central America, Alaska and Hawaii, immersing himself in local food and culture. He met Penelope Koch, TRUE NORTH’S stewardess, in Alaska. Together they worked in restaurants for over a year before pursuing careers in chartering – the perfect blend of travel and culinary adventures.
Classic French, Japanese, Italian, Latin American and Mexican, Southern Comfort food – whatever your preference, Chef Wootten will weave them all into a menu created just for you. Choosing wines that truly compliment a meal is an art and wine pairing was a central part of Brandon’s professional training. Having won Gold, Silver and Bronze medals in 2004’s Southern Home Brewing Competition, he can also recommend the perfect beer to compliment more casual menu offerings. Stewardess Penelope Koch, American
Penelope, a former camp counselor, enjoys making people happy and making sure they are having a good time. One of her first loves was singing. She started performing in musical theater at a very young age, continued through high school and studied vocal performance/piano at Nashville’s Belmont University. Her other passion – and source of unlimited energy - is athletic training/sports medicine/nutrition which she studied at West Chester University in Pennsylvania.
In college Penelope worked in several restaurants, always building a loyal clientele base drawn to her upbeat personality and positive attitude. Penelope says she hasn’t done many impressive things with her life - and then tells about traveling to Alaska for a summer job. There she met Brandon Wootten, now TRUE NORTH’s chef, and lived in a tent until cold weather ‘inspired’ them to move to Maui.
Light-hearted, energetic, caring and conscientious, Penelope is focused on giving TRUE NORTH’s guests the very highest standard of service.
